Lambek Coffee is a company set into action since April 2020 with primary objective of supplying speciality coffee directly from the farmers to the high end roasters across the globe. The management of LC is comprised with highly experienced people who have been working in the high end specialty coffee for over a decade. Lambek Coffee Ltd is a startup private limited company that is processor and exporter of Ethiopian Yirgacheffe green coffee beans from the Gedeo highlands. Our prime assets are our hardworking employees and the farmers around us.

Selective cherry flotation separates less-dense fruit before mechanical depulping. Parchment undergoes controlled mucilage removal followed by water washing and slow drying on ventilated raised beds.

Whole ripe cherries are spread in thin single layers on elevated mesh beds. Regularly racked under mountain sun and covered during peak midday heat to ensure gentle, uniform dehydration.

Flotation & Density Grading
Cherries enter water tanks where less-dense floaters are skimmed away to ensure uniform seed density.
Raised-Bed Sun Drying
Cherries/parchment rest on elevated African beds, regularly racked under strict layer depth to reach 10–12% moisture.
Curing & Stabilization
Dried lots rest in cool warehouses for 4–6 weeks, stabilizing water activity and locking in aromatic complexity.
Dry Milling & Export Lab
Hulled, gravity-separated, optical color-sorted, and cupped in Addis Ababa before export packing in Ecotact liners.
